Velveeta Mac & Cheese

Disclosure:

I did not actually use Velveeta in this dish.  It’s the Aldi  equivalent to Velveeta.  It’s called Clancy’s Cheese Melt.   However, whether you are using the Aldi brand of Velveeta or the actual stuff.  This recipe is delicious.  I do have to say though, Aldi’s Velveeta is 3 dollars cheaper, and you cannot tell the difference.

Now that I have that confession out of the way, let me tell you about his delicious recipe.

I have been perfecting this recipe for years.  My favorite macaroni and cheese is from a soup, salad, and sandwich restaurant is someplace you might have heard before. Panera?  Heard of it?  Well, if not, they have the most delicious macaroni and cheese recipe that you will ever have in your life.

They give you pretty big bowls.  Certainly enough to satisfy any normal person, but when I eat it.  I want a lot of it.  I had to find a way to make it at home so that I can eat it in the comfort of my home….without the judgmental eyes of all the skinny people eating at Panera.

Preheat the oven to 400 degrees.

Boil shell pasta in a stock pot.  Cook according to the package instructions to al dente.

Melt 1/4 cup of butter in a dutch oven over medium heat.

Sprinkle flour into the butter.

Whisk to combine, and cook for 3 to 5 minutes.  Careful not to burn the mixture, just long enough for the flour to cook a few minutes.

Pour in two cups of milk.

Whisk to combine.

Cook for about 5 minutes.  Allow the mixture to thicken.  If you feel like the mixture feels tight, add a little more water or milk, a couple tablespoons at a time.

Whisk every 30 seconds to avoid burning.

Once the roux has thickened, add a teaspoon of mustard

and nutmeg.

Taste, and season appropriately with salt and pepper.

Now for the glorious cheese….

Add 8 ounces of Clancy’s Cheese Melt (or Velveeta)

and stir to combine.

Add cooked pasta and stir to combine.

Pour into a prepared baking dish.

Cover with smashed butter crackers and parmesan cheese.

Bake at 400 degrees for 20 to 25 minutes, until the top is golden brown and delicious.

  • 1 package shell pasta
  • 8 oz Clancy's Cheese melt (Aldi) or Velveeta

  • 1 tsp dry mustard
  • 1 tsp nutmeg
  • Salt and Pepper
  • 1/2 cup buttery crackers, smashed
  • 1/2 cup parmesan cheese
