I. Love. Chicken. Cordon. Bleu.

My mom used to buy frozen chicken cordon bleu from the Swanson man.  They were breaded and cheesy.  Very very delicious and comforting.  They were breaded pieces of chicken with a pocket of cheese and ham just waiting to explode.

These bad boys are a step up from the frozen.  They are not breaded, so they are a little better for you.  And they are not filled with preservatives.

I used leftover ham from my 5 Ingredient Slow Cooker Ham recipe, but if you just wanted to use deli ham or ham steaks from the deli department.  Go for it! You are the king of your castle.

Chicken Cordon Bleu

Start by preheating the oven to 375 degrees.

Split each chicken breast in half, and pound it thin between two pieces of plastic wrap. You should end up with 8 pieces of chicken.

Lay a slice of ham on the chicken breast.

Sprinkle with Swiss cheese.

Chicken Cordon Bleu

Roll up the chicken breast, and secure with twine or a toothpick.

Place on a baking sheet while butter is heating in a saute pan.

Brown each piece of chicken in a saute pan, about 3 minutes per side.

Return the chicken to a baking sheet, and bake at 375 degrees for 20 minutes, until the chicken is fully cooked.

While chicken is in the oven, add 1/4 cup of butter to the chicken drippings.

Sprinkle flour into the butter and chicken drippings.

Whisk, and cook for 3 to 5 minutes being careful not to burn the roux.

Add chicken stock, and whisk to combine.  Cook for 3 to 5 minutes until the roux has thickened.

Add mustard, and stir.

Annnddddd because you need a reason to get on the treadmill in the morning……

a splash of cream to make the whole thing rich and delicious.

Once the chicken is fully cooked, slice and drizzle with the mustard cream sauce. Serve with potatoes.

  • 8 ounces grated Swiss cheese

  • 2 tbsp mustard
  • Splash of heavy cream
