Meatloaf Sandwich

Y’all this meatloaf sandwich will make your heart sing!

My favorite way to save time and money is to “shop” my refrigerator. Before I  start browsing the internet for new dinner ideas, before I make a trip to Aldi, I look at my refrigerator and take an inventory of what I have.

If I have leftovers from last night, I try to use them in new and exciting ways! Well, this meatloaf sandwich is so simple and delicious.  You could even tell your family that you’re using leftovers, and they won’t even care! This sandwich. is. that. good.

Meatloaf Sandwich

I start by using my favorite meatloaf recipe. 

Along with ciabatta, mozzarella cheese, tomatoes, mayonnaise, pesto and jarred pickled jalapeños.

Preheat the oven to 400 degrees.

Slather a two pieces of ciabatta with pesto

and mayonnaise.

On one side of the ciabatta, place slices of cheese and top with tomatoes and pickled jalapeños. (well, I love cheese, so I put cheese on both sides.  Do whatever feels right to you. You are the captain of your kitchen!)

On the other side of the ciabatta, place a slice of meatloaf. Put the sandwich together, and stabilize with toothpicks.

Bake at 400 degrees for 10 minutes, or until the cheese has melted and bread is toasted.

  • 1 loaf ciabatta
  • 8 oz mozzarella cheese
  • 3 roma tomatoes
  • Mayonnaise
  • Pesto
  • Jarred pickled jalapeños

Instructions

I start by using my favorite meatloaf recipe, along with ciabatta, mozzarella cheese, tomatoes, mayonnaise, pesto and jarred pickled jalapeños.
