Bacon Wrapped Jalapeno Meatloaf

There is just something about meatloaf.  I think about it all the time.  Especially on those days when it’s chilly outside, and I just want something quick, easy and comforting.

This recipe certainly fits the bill.

The other reason why I love this recipe….I sneak in tons of mushrooms.  They give the meatloaf an extra depth flavor.

I doubled this recipe just so I would have leftovers! Bacon Wrapped Jalapeño meatloaf makes a perfect meatloaf sandwich or just with a fork eating by the light of the refrigerator at 3 am……

Either way, you have got to make this meatloaf! It’s going to rock your world.

Bacon Wrapped Meatloaf

Preheat the oven to 400 degrees.

In a large mixing bowl, place ground beef, mushrooms, butter crackers, eggs, Worcestershire sauce, dijon mustard, salt and pepper and mix together.

With clean hands, mix the ingredients together until well combined.

Form the mixture into a loaf, and place on a slotted broiler pan. If you don’t have a broiler pan, use a baking sheet lined with aluminum foil (I promise, this will save you a lot of clean up time!)

Lay jalapeño slices on the top of the meatloaf.

Then, lay the bacon slices over the top.

Tuck the excess bacon under the meatloaf.

Make the sauce: whisk together bbq sauce and pickled jalapeño juice.

Brush 1/4 of the mixture over the top of meatloaf.

Bake at 400 degrees for 30 minutes. Brush another 1/4 of the sauce over the meatloaf, and bake for another 30 minutes.

Slice and serve with the remaining bbq jalapeño sauce!

  • 2 lb ground beef
  • 8 oz white button mushrooms, chopped
  • 1 cup butter crackers, broken up
  • 2 eggs
  • 1 tbsp Worcestershire sauce

  • 8 to 10 slices bacon
  • 1/4 cup pickled jalapeños
  • 1/2 cup bbq sauce
  • 1/4 cup pickled jalapeno juice
